The key ingredient in this cake is the baby food. When this recipe was first used, baby food was processed with tapioca which helped add denseness to the cake, yet it retained its moisture. Plum baby food at that time was easy to find, but since tapioca is no longer used in baby food, additional fruits are added with the plums.
The apple and plum combination works best with this recipe, but other fruit choices can be substituted. Earth's Best is an Organic baby food that does not have any additives and works well with this recipe.
Helpful Hints
This cake should only be mixed by hand. It is best to use a wooden spoon. A mixer will cause the cake to be tough and dry. The cake batter will retain some lumps, but overall a few strokes with the wooden spoon will sufficiently mix the ingredients if sequenced is followed as listed in the instructions.
When preparing the pan for baking, use a cooking spray and then lightly dust the pan with flour so that the cake will easily release from the pan (see picture below).
Since cooking times in oven vary, check on the cake after 30 minutes to make sure that it does not overcook.
Plum Cake tastes great alone, with ice cream, or with whipped topping.
Easy Plum Cake Recipe
Ingredients
- 2 cups of self-rising flour
- 2 cups of sugar
- 1 teaspoon of ground cinnamon
- 1 teaspoon of ground cloves
- 1 cup of vegetable oil
- 4 eggs
- 2 small jars of baby food (4 ounces)
Instructions
- Do not use a mixer
- Preheat oven to 350 degrees Fahrenheit
- Mix flour and sugar together in a large-sized bowl with a wooden spoon
- Add cinnamon and cloves, mix well
- Make a well in the center of the dry ingredients
- In a small bowl break eggs and mix well
- Add oil
- Mix together in small bowl
- Pour egg and oil mixture into well of the dry ingredients
- Use wooden spoon to mix eggs, oil, and dry ingredients
- Add baby food and mix well
- Prepare bundt / fluted tube pan with cooking spray and lightly dust with flour
- Pour batter into pan
- Bake for 45-50 minutes until toothpick inserted in center comes out clean
- Let cake sit for 2-3 minutes
- Use flat knife to go around edges and center to help release cake from pan
- Place cake plate on top of baking pan and quickly flip cake onto plate
- Let cake cool for another 5 minutes before serving
It is best not to cover the cake until it is completely cool. This usually takes about one hour. Cake will keep for four to five days in an airtight container.
